  • 700 g beef chuck, cut into small cubes
  • 400 g can black beans, drained
  • 2 cups fresh corn kernels
  • 400 g can chopped tomatoes
  • 3 cups beef stock
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1/2 tsp red pepper flakes
  • 1 stalk celery, chopped
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • salt, to taste
  • freshly ground black pepper, to taste
  • oil


  1. Season the beef cubes with salt and freshly ground black pepper.
  2. Heat oil in a large, heavy pot over high heat. Add the seasoned beef to the pot and arrange it in a single layer. Cook for 3 minutes without stirring to allow the beef to brown. Stir well, arrange the beef in a single layer again, and cook for another 3 minutes until browned on all sides.
  3. Lower the heat to medium-low and add the diced onions and chopped celery to the pot. Cook for 3 minutes, stirring frequently, until the vegetables are softened.
  4. Add minced garlic, chili powder, cumin, and red pepper flakes to the pot. Stir well and cook for 1-2 minutes, stirring constantly, until fragrant.
  5. Pour in the beef stock and stir well to combine. Raise the heat to high and bring the broth to a simmer.
  6. Cover the pot, lower the heat to low, and let the stew simmer for 45 minutes. Stir occasionally. Add water if required.
  7. Add the fresh corn kernels and chopped tomatoes to the pot. Stir well and bring the stew to a boil. Lower the heat to medium-low, cover the pot, and let the stew cook for another 15 minutes, stirring occasionally.
  8. Add the drained black beans to the stew and continue to cook for an additional 15 minutes, until all the flavours are well combined and the stew has thickened slightly.
  9. Taste the stew and adjust the seasoning with salt if needed. Serve hot and enjoy.
