  2. Heat cooking oil in a wok or deep-frying pan over medium-high heat, bringing it to a temperature of 180°C.
  3. Once the oil is hot, carefully add the lamb chops to the pan, ensuring they are not overcrowded. Deep fry the chops until they achieve a golden-brown colour and develop a crispy exterior, which typically takes around 6 to 8 minutes depending on the thickness of the chops.
  4. Using a slotted spoon or tongs, remove the fried lamb chops from the oil and transfer them to a serving platter lined with paper towels to absorb any excess oil.
  5. While still hot, generously sprinkle the fried lamb chops with fried garlic, cumin seeds, and chopped green chilies.
  6. Serve immediately.

  2. I don’t do much deep frying, actually none. But I love what you did here. I’ll just cook them in a skillet!

  3. I’m willing to do a little deep frying now and then, and this seems like a really great reason to do it. Lamb with those spices is a wonderful combination. Whenever I make rack of lamb, I often take off the last two ribs and put them in the freezer for occasions just like this. I think I have about 10 individual ribs just waiting to be deep fried.
