Succulent lamb infused with aromatic spices, crispy perfection.

As an avid enthusiast of Chinese cuisine, I often find myself inspired by the tantalizing dishes served at my favourite takeaway restaurants. Recently, a mouthwatering photo caught my attention: “Deep Fried Lamb Racks with Cumin Seeds.” The mere mention of cumin-infused lamb, coupled with the crispy edges depicted in the image, stirred my culinary curiosity, prompting me to recreate this delectable dish in the comfort of my own kitchen.

Upon further contemplation, I couldn’t help but draw parallels between this dish and the beloved Spicy Cumin Lamb Skewers that have long been a staple in Chinese cuisine. While the preparation method may differ—deep-frying versus barbecuing—the harmonious marriage of cumin and succulent lamb remains a consistent theme, evoking memories of cherished flavours and aromatic spices.

Indeed, the union of cumin and lamb is a time-honoured tradition in Chinese culinary repertoire, evident in dishes such as Cumin Lamb (孜然羊), renowned for its bold, robust flavours and aromatic undertones. As I embarked on my culinary adventure, I sought to capture the essence of this beloved pairing while adding my own unique twist to the recipe.

Opting for lamb chops in lieu of lamb racks, I aimed to strike a balance between flavour and affordability without compromising on quality. As I prepare the lamb chops the fragrant aromas of cumin and garlic just filled up my kitchen, I knew I was on the cusp of culinary greatness. With each bite, I savoured the harmonious interplay of flavours—savory, aromatic, and undeniably delicious. This was good!

  1. In a bowl, thoroughly combine the lamb chops with sea salt, black pepper, garlic powder, cumin powder, and red chili powder, ensuring each chop is evenly coated with the spices.
  2. Heat cooking oil in a wok or deep-frying pan over medium-high heat, bringing it to a temperature of 180°C.
  3. Once the oil is hot, carefully add the lamb chops to the pan, ensuring they are not overcrowded. Deep fry the chops until they achieve a golden-brown colour and develop a crispy exterior, which typically takes around 6 to 8 minutes depending on the thickness of the chops.
  4. Using a slotted spoon or tongs, remove the fried lamb chops from the oil and transfer them to a serving platter lined with paper towels to absorb any excess oil.
  5. While still hot, generously sprinkle the fried lamb chops with fried garlic, cumin seeds, and chopped green chilies.
  6. Serve immediately.

  1. They look fingerlickingly delicious! Have never thought of frying lamb chops…can’t wait to try it. And I am going to fry them in tallow :-))

  2. I don’t do much deep frying, actually none. But I love what you did here. I’ll just cook them in a skillet!

  3. I’m willing to do a little deep frying now and then, and this seems like a really great reason to do it. Lamb with those spices is a wonderful combination. Whenever I make rack of lamb, I often take off the last two ribs and put them in the freezer for occasions just like this. I think I have about 10 individual ribs just waiting to be deep fried.

Ohhh I can imagine how flavorful this lamb is with the cumin seeds! A great dish for Easter!

  5. Hannah says:

The technique and seasonings are everything! I’d love to apply this concept to seitan ribs…

  6. I am not too familiar with cooking with lamb, but the meat looks perfectly prepared and so delicious! Loving the addition of cumin seeds.
