Cold noodles are a revelation, especially when paired with unexpected ingredients. My journey with cold noodle dishes began with a delightful surprise at a barbecue party, where I tasted Cold Noodles with Sesame Sauce, Egg, and Cucumbers. The cool, savory flavours instantly captivated me.
Next came Naengmyeon, a Korean cold noodle dish traditionally made with beef broth. Despite my initial scepticism, I found it to be incredibly refreshing, devoid of heavy oils or greasiness. I was hooked.
Then came Subak Naengmyeon, a unique creation that combines the refreshing sweetness of watermelon with the tangy spice of cold noodles. While not a dish steeped in centuries of tradition, it’s a modern innovation that perfectly captures the essence of summer in South Korea. As watermelon and cold noodles come into season, Subak Naengmyeon emerges as a delicious fusion of flavours and textures.
The preparation is simple yet ingenious. Cooked noodles are tossed in a spicy sauce made with rice vinegar, sesame oil, garlic, sesame seeds, gochujang, and gochugaru. This flavourful mixture is then placed into a carved-out watermelon, serving as both a bowl and a key ingredient. Topped with fresh cucumbers, radish, and boiled eggs, Subak Naengmyeon offers a delightful blend of sweet, savory, and tangy flavours, with just the right amount of heat.
My daughter’s rendition of Subak Naengmyeon left me enchanted. Using leftover watermelon so we don’t have the emptied skin on the photo above, nevertheless she created a dish that not only tasted fantastic but also added a playful twist to our usual dining experience. It’s a dish that challenges convention and invites you to embrace culinary creativity.
