Units Scale

Stir Fry

  • 750 g skinless, boneless chicken thighs, cut into 1/2-inch pieces
  • 12 pcs Medjool dates, pitted and cut into 1/2-inch pieces
  • 2 celery stalks, cut into 1/2-inch pieces
  • 3/4 cup roasted salted peanuts
  • 6 cloves garlic, minced
  • 1/2 thumb sized ginger, minced
  • 3 stalks spring onions, sliced
  • handful coriander, roughly chopped
  • salt
  • freshly ground black pepper
  • oil




  1. In a medium bowl, whisk together marinade ingredients. Add the chicken and toss to coat. Set aside for at least 15 minutes, or up to 30 minutes.
  2. In a small bowl, whisk together sauce ingredients. Set aside.
  3. In a wok heat oil over medium heat. Add the garlic and ginger and stir-fry for 30 seconds, until fragrant but not browned.
  4. Add the marinated chicken and stir-fry for 5 minutes.
  5. Push the chicken to one side of the pan and add a bit of oil. Add the spring onions, celery, and dates, then stir-fry for 3 minutes.
  6. Pour in the prepared sauce and stir-fry for 1-2 minutes, until the sauce thickens and coats the chicken and vegetables.
  7. Stir in the chopped coriander and peanuts. Taste and adjust seasoning with salt and pepper if needed.
  8. Serve immediately with rice, enjoy.

    With my love of stirfries so very practical for one I have used all your ingredients methinks on variations on the theme EXCEPT medjool dates which have not graced my kitchen enough and somehow have not fitted ‘into the themes. Surely shall try !!!

  2. Dates are the surprising ingredient here, but it does make the sense to balance the soya sauce and sambal oelek with natural sweetness from the dates!
