Paneer and Vegetables
- 400 g paneer, cubed
- 200 g button mushrooms, halved
- 1/2 cup fresh green peas
- 4 tbsp butter
- 2 green chillies, chopped
- 1 pc bay leaf
- 4 pcs cloves
- 2-inch cinnamon
- 1 pc cardamom
- 1 tbsp ginger garlic paste
- 2 tbsp ghee
- 2 tbsp tomato paste
- 1/2 cup hot water
- 1 tsp garam masala
- 1 1/2 tsp ground coriander
- 1/2 tsp red chilli powder
- 3 tbsp chopped coriander leaves
- salt

Instructions
Cashew Yoghurt Paste
- Heat ghee in a pan, add cardamoms in a saucepan.
- Add and fry sliced onions until golden brown.
- Add cashews continue to sauté for a couple of minutes then turn heat off and let them cool.
- Using a hand blender, blend the cooled onions and nuts with yogurt to a smooth puree. Set aside.
Curry Sauce
- Heat oil in a pot over medium heat.
- Add and sauté bay leaf, cinnamon, cloves, and cardamom for a minute.
- Add green chillies and ginger garlic paste, sauté until fragrant.
- Mix in cashew yoghurt paste and tomato paste. Add hot water and combine.
- Add salt, coriander powder, garam masala, and chili powder. Bring to a boil, then simmer covered.
Paneer and Vegetables
- Melt butter in a separate pan and brown mushrooms. Set aside.
- Add paneer to the curry sauce, simmer until tender, around 5 minutes
- Add browned mushrooms and peas, cook for 3 more minutes.
- Adjust thickness with hot water if necessary
- Remove from heat and serve.
