My brother-in-law talks about this dish from his time in the Philippines – he love it. Oh, and at the family reunion, my nephew-in-law and I made Chicken Kelaguen, which he remembers form his mother. We made it the night everyone ordered pizza – we couldn’t eat the pizza (me allergic to garlic, he and my niece no dairy) so we made the chicken. (He’s the Guamanian I was telling you about.)
It’s a perfect balance of rich and refreshing! I’d sure love a bowlful of this treat right now. I’ve actually never made it myself and didn’t realize the recipe was so simple.
