  1. In a large bowl, combine the clam meat, finely chopped potato, flour, baking powder, beaten eggs, finely chopped onion, chopped parsley, freshly ground black pepper, and salt. Mix all the ingredients together until they are well combined and can hold their shape to form a patty. Set the mixture aside.
  2. Heat oil in a non-stick pan over medium heat. Once the oil is hot, drop two tablespoons of the mixture into the pan, shaping them into cakes as you go. Cook 4 or 5 fritters at a time, allowing them to cook for approximately 4 minutes on one side before carefully flipping them over to cook the other side then cook for another 4 minutes.
  3. Once the fritters are golden brown and crispy on both sides, remove them from the pan and place them on a paper towel-lined plate to drain any excess oil. Keep the fritters warm while you cook the remaining batches.
  4. Serve the Clam and Potato Fritters as a delightful appetizer or a light meal. They can be enjoyed on their own or paired with a dipping sauce of your choice, such as sweet chilli, tartar sauce or aioli.
