If you’re a seafood lover, then you must have tried crispy salmon belly. This dish is not only delicious but also very easy to prepare but be warned this is an extremely rich food that is why it is perfect as a pulutan or an appetizer as a couple of it may be too much for some to handle. Serve it with something sour or strong acidic spicy dip to balance the flavours out.

Salmon belly is a cut of salmon that comes from the fatty underbelly of the fish, it is a product of filleting salmon making this an off cut. Some cuts include the fins, some just use the belly, either of them can be used on this recipe we have today. During the past these are thrown away but nowadays they started to become available in fishmongers and supermarkets. As people start to know how to prepare and enjoy them the price had skyrocketed during the past years, I still remember them to be around NZ$6.00 a kilogram, not it is sold as much as NZ$20.00+ per kilo, there is even commercially available wood roasted and smoked products on Supermarket shelves.

Ingredients

Units Scale
  • 700 g Salmon belly
  • Salt
  • freshly ground black pepper
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • oil, for deep frying

Instructions

  1. Start by cleaning the salmon belly and drying it thoroughly using paper towels.
  2. Season both sides of the salmon belly with salt and pepper to taste.
  3. In a bowl, combine the flour and cornstarch.
  4. Coat the salmon belly with the flour mixture, shaking off any excess.
  5. Heat the oil in a wok or deep fryer over medium-high heat until it’s hot.
  6. Add the salmon belly to the wok and deep fry it until it’s crispy and golden brown.
  7. Once done, remove the salmon belly from the wok and place it on a paper towel to absorb any excess oil.
  8. Finally, serve the crispy salmon belly with your favourite dipping sauce.

    I don’t think we can get salmon belly here. Even if we can, it is going to be mighty expensive despite being the frozen farmed ones from places like Chile or Norway.

  4. I think we in the United States are at a disadvantage that our supermarkets never show fish whole. They show the steaks, the fillets, and everything is cleaned to perfection. So I ask a question… Is the salmon belly simply the really fatty skinnier side of a salmon fillet? I think we would both really enjoyed this dish…
