Salmon belly is a cut of salmon that comes from the fatty underbelly of the fish, it is a product of filleting salmon making this an off cut. Some cuts include the fins, some just use the belly, either of them can be used on this recipe we have today. During the past these are thrown away but nowadays they started to become available in fishmongers and supermarkets. As people start to know how to prepare and enjoy them the price had skyrocketed during the past years, I still remember them to be around NZ$6.00 a kilogram, not it is sold as much as NZ$20.00+ per kilo, there is even commercially available wood roasted and smoked products on Supermarket shelves.
Crispy salmon belly is a dish that has gained popularity in recent years, especially in the Philippines. While salmon is not native to the Philippines, it has become a popular ingredient in many Filipino dishes due to its rich flavour and health benefits. Salmon is a good source of omega-3 fatty acids, which can help reduce the risk of heart disease, so eating this is like indulging in a real fatty food without the guilt.
Sounds delicious! Something about the belly that’s extra special, no? Salmon belly, tuna belly and pork belly are all super tasty and, as you say, rich.
I don’t think we can get salmon belly here. Even if we can, it is going to be mighty expensive despite being the frozen farmed ones from places like Chile or Norway.
I think we in the United States are at a disadvantage that our supermarkets never show fish whole. They show the steaks, the fillets, and everything is cleaned to perfection. So I ask a question… Is the salmon belly simply the really fatty skinnier side of a salmon fillet? I think we would both really enjoyed this dish…
They surely look very GOOD! Now I have find out where to find salmon belly over here…

This is literally just below that part you mention, its usually thrown away as its the part from the fin to the fish orifice.
Thanks — I’ll talk to my fish guy at the Asian market — maybe he can help me get this!
