- 1 1/2 kg pork pata (pork leg), cut into sections
- 1 cup dry cannellini beans, soaked overnight and drained
- 1 cup dry black beans, soaked overnight and drained
- 1 bunch sweet potato leaves
- 1 large onion, chopped
- 1 whole head garlic, minced
- oil
- fish sauce
- water
- salt
- freshly ground black pepper
Instructions
- Heat the oil in a large pot over medium-high heat. Add garlic and sauté until golden brown and fragrant. Remove toasted garlic from the pot then set it aside.
- Add the onions then continue to sauté until onions turn soft.
- Add the pork pata, black beans, cannellini beans and salt to the pot then pour enough water to cover the meat. Bring to a boil, then reduce the heat to low and let it simmer for about 2 or until the meat is very tender.
- Once the pork pata is tender, add the toasted garlic and sweet potato leaves then simmer for 2 more minutes then season with fish sauce and freshly ground black pepper to taste.
- Serve hot, enjoy.
