Butternut Squash, Sweet Potato and Chicken Soup

🍂🍲 Warm up with this cosy autumn soup, filled with delicious flavours that will make your taste buds dance! 🍁🌟 Perfect for chilly evenings, and easy to make for a quick and satisfying meal. 😋👌 This autumn soup is a tasty blend of butternut squash, sweet potato, and chicken – the perfect comforting meal on chilly nights.

Soup is one of the ultimate comfort foods, especially on cold nights when all you want is a warm and satisfying meal. This Butternut Squash, Sweet Potato, and Chicken Soup is perfect for such occasions. The combination of sweet potatoes, butternut squash, carrots and chicken creates a delicious and nutritious soup that is hearty enough to be a complete meal on its own.

What makes this soup unique is the addition of fresh corn kernels and green chillies that add a nice crunch and a little heat to the dish. The cream also adds a slightly creamy texture that blends perfectly with the natural sweetness of the vegetables. This soup is not as heavy as chowder, but it is still substantial enough to be filling and satisfying.

One of the great things about this soup is that it can be made using leftover vegetables that you might have in your fridge or freezer. Like me I have the habit of storing root crops and squash that are extras, cutting them in cubes then storing them in the freezer for future use. If you don’t have any leftover vegetables, you can use fresh ones too. You can also use the clean peelings of sweet potatoes, squash, and carrots, as well as corn cobs, to add more depth of flavour to the stock.

This Butternut Squash, Sweet Potato, and Chicken Soup is perfect for a quick and easy weeknight dinner. It is also a fantastic way to use up leftover vegetables and create a healthy and nutritious meal. Serve it with some crusty bread for a complete meal. This soup is sure to warm you up and leave you feeling satisfied and nourished.
