In our post today I used only Shiitake and Enoki, but you can mix and match these with the addition of King Oyster, and Shimeji mushrooms, just experiment with different types of mushrooms to suit your taste.

Ingredients

Mushrooms

  • 500 g Asian mushrooms (shiitake, enoki, shimeji)
  • 2 tbsp sesame oil (or vegetable oil)

Marinade


Instructions

  1. Prepare the mushrooms by removing stems and clusters and slicing them to 2mm thickness.
  2. Heat oil in a frying pan over medium-high heat and sauté mushrooms until browned and wilted.
  3. Turn off heat, add marinade ingredients and mix well.
  4. Transfer the mushrooms and marinade to an airtight container and refrigerate overnight for best results.

  5. I do like playing around with different types of mushrooms, but they can be a bit difficult to find unless you have a large wallet. I’m not sure I’ve even come across enoki or shimeji mushrooms…I’ll have to keep an eye out!
