This dish is made by sautéing mushrooms in sesame oil and then marinating them in a mixture of dashi stock, soy sauce, mirin, and rice wine vinegar. The dish is then left to marinate overnight, allowing the mushrooms to absorb the flavourful marinade.

In our post today I used only Shiitake and Enoki, but you can mix and match these with the addition of King Oyster, and Shimeji mushrooms, just experiment with different types of mushrooms to suit your taste.

This dish is a good source of nutrition, as mushrooms are known to be low in calories and high in nutrients such as fibre, vitamins, and minerals. The dashi stock, which is a type of Japanese soup stock made from fish, seaweed, or mushrooms, adds a savory umami flavour to the dish.

Marinated Japanese Mushrooms

Units Scale


  • 500 g Asian mushrooms (shiitake, enoki, shimeji)
  • 2 tbsp sesame oil (or vegetable oil)



  1. Prepare the mushrooms by removing stems and clusters and slicing them to 2mm thickness.
  2. Heat oil in a frying pan over medium-high heat and sauté mushrooms until browned and wilted.
  3. Turn off heat, add marinade ingredients and mix well.
  4. Transfer the mushrooms and marinade to an airtight container and refrigerate overnight for best results.

  5. I do like playing around with different types of mushrooms, but they can be a bit difficult to find unless you have a large wallet. I’m not sure I’ve even come across enoki or shimeji mushrooms…I’ll have to keep an eye out!
