Today our deep fried seafood platter will consist of large prawns, squid, crab sticks and gurnard which I lightly battered just enough to make it crunchy on the outside but not replace the nice tender, moist and sweet flavour of the fresh catch.

Description

Deep Fried Seafood Platter is a dish of mixed seafood that is lightly coated then deep fried until the breading is golden brown and crispy.


Ingredients

  • 6 pcs gurnard, head off
  • 8 pcs crab sticks
  • 400 g large prawns, peeled and deveined
  • 400 g calamari, cut into rings
  • 2 eggs, beaten
  • 3/4 cup all-purpose flour
  • 3/4 cup cornstarch
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt
  • freshly ground black pepper
  • oil, for frying

Instructions

  1. Preheat a deep fryer or a large pot of oil to 180C
  2. In a shallow dish, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.
  3. Dip each piece of seafood into the beaten eggs, then coat with the flour mixture, making sure to evenly coat all sides.
  4. Carefully place the coated seafood into the hot oil and fry for 2-3 minutes for prawns, calamari and crab stick 7-8 minutes for the gurnard, or until the coating is golden brown and crispy. Remove the seafood from the oil and drain on a paper towel.
  5. Repeat the frying process with the remaining seafood.
  6. Serve the deep-fried seafood platter with tartar sauce, sweet chilli sauce and lemon wedges. Enjoy!
