White Bean and Butter Bean Soup

Love beans? then this easy to prepare soup is for you. White Bean and Butter Bean Soup is a simple dish of cannellini beans, butter beans and spinach cooked in a simple flavourful broth with pork jowls and anchovies.

Its freestyle day today and I haven’t done this for a while, got tired of cooking dishes over the holiday period so today there were no actual menu plan at home, and I just gathered what I can see from my pantry and freezer. Got hold of a couple of bean cans, some spinach on the fridge and pork jowls on the freezer and made this soup recipe for today. Not perfect for our weather now here in New Zealand as it is in the middle of summer, but I love soups, also in the Northern Hemisphere this can be useful as it can warm your cold winter nights.

White Bean and Butter Bean Soup is a simple dish of cannellini beans, butter beans and spinach cooked in a simple flavourful broth with pork jowls and anchovies.


Units Scale
  • 250 g pork jowl, cubed
  • 400 g can cannellini beans
  • 400 g can butter beans
  • 100 g baby spinach
  • 3 pcs shallots, finely chopped
  • 4 cloves garlic, minced
  • 4 pcs anchovy fillets, finely chopped
  • 3 cups chicken stock
  • salt
  • freshly ground black pepper
  • 1 tsp red chilli flakes
  • oil


  1. Generously season pork jowls with salt.
  2. In a pot heat oil to its smoking point then brown pork jowls on all sides.
  3. Lower the heat then add shallots and garlic, cook for a couple of minutes.
  4. Add anchovies then cook for a few seconds or until pungent aroma is released.
  5. Pour chicken stock bring to boil then reduce heat to low and simmer for 5 minutes.
  6. Add cannellini beans and butter beans, cook for 10 more minutes.
  7. Add the spinach mix well then simmer for 2 more minutes.
  8. Taste, season freshly ground black pepper, chilli flakes and with salt if needed.
  9. Turn off the heat and serve while hot.

  • Very much like this and shall copy ! Even use tinned beans for speed and simplicity tho' I do avoid tinned food as much as I can both for the usual excess salt content and the chemicals used to construct cans/tins . . . but, sometimes, for convenience . . . :) !

  • Great idea to add pork and anchovies here! White beans in soup are always yummy, but they can be a bit bland. Love this combination!
