Matcha Sugar Cookies

A classic irresistible, soft, chewy and sweet cookie recipe that is simple to make and uses everyday pantry ingredients. Matcha Sugar Cookies is a type of cookie made with sugar, matcha, flour, butter, eggs, vanilla, baking powder and baking soda known for its tender insides with crisp edges.

Our matcha princess strikes again, this time with Matcha Sugar Cookies. Me and my wife never liked matcha before but our daughter, for some reason have an affinity to and loves to buy and bake anything that has matcha on it. Matcha Crinkles, Matcha Macarons and Matcha Roll Cake, name it she made it, and this is the most recent, in a form of sugar cookies.

So, what is a sugar cookie? So as the name suggest, a sugar cookie is a cookie with the main ingredients being sugar, where it is combined with flour, butter, eggs, vanilla, baking powder and baking soda. It is then formed by hand, dropped, or rolled and cut into shapes. Then to top things up they are rolled in more sugar, icing, sprinkles, or all of them. So, it’s really a simple cookie and versatile too, you can add any flavour you want to decorate it with any sprinkles you wish.

For today my daughter used her favourite Asian flavours Matcha but she also made plain ones of these before as well as chocolates.

Dry Ingredients

Wet Ingredients

  • 1 cup butter, room temperature
  • 1 cup white sugar
  • 1 1/2 tbsp brown sugar
  • 2 tsp vanilla extract
  • 1 large egg

Coating

  • 1/2 cup white sugar

Instructions

  1. Sift together dry ingredients into a large mixing bowl, set aside
  2. In a separate large mixing bowl cream together butter, granulated sugar, and brown sugar using a mixer until fluffy and light in colour.
  3. Add the vanilla and egg and mix well until combined.
  4. Gradually add the dry ingredients into the wet ingredients until just combined, make sure you do not over mix the dough otherwise it would be hard.
  5. Place the white sugar in a shallow bowl, set it aside.
  6. Using a small ice cream scooper, scoop the dough and form cookie dough balls with roughly 2 tbsp of the dough. Using your hands in forming them into spherical shapes.
  7. Gently roll each ball in the sugar bowl until completely covered.
  8. Place the dough balls into a baking paper lined baking tray leaving 2 inches in between them bake on a 180C pre heated oven for 8 to 10 minutes or until the edges turn slightly golden.
  9. Remove from the oven, let it rest for 5 minutes before transferring to a wire cooling rack.
