Pesto Pasta

Not all green dishes are created equal, and this pasta recipe is definitely overflowing with flavours. Pesto pasta is an Italian dish made with noodles tossed in a sauce made with crushed garlic, pine nuts, salt, basil leaves, Parmigiano-Reggiano or Pecorino Sardo and olive oil.

Not all great dishes take time to make, take this pesto pasta for example, as long as you have a pesto sauce handy with you all you need is several minutes and you’re in for a treat. Its fresh, its vibrant, its cheesy and thanks to the cheese, it is also filled with umami.

Any pasta can be used on this dish, I had tried it on penne, ziti, fettucine but I am a simple guy, so a thin spaghetti is my usual preference. As for the serving, you can serve it on its own, with meat or with seafood, either way with pesto on your table you are in for a really nice meal.

Description

Pesto pasta is an Italian dish made with noodles tossed in a sauce made with crushed garlic, pine nuts, salt, basil leaves, Parmigiano-Reggiano or Pecorino Sardo and olive oil.


Ingredients

Units Scale
  • 180 g spaghetti noodles, cooked according to package instructions
  • 1/2 small onion, finely chopped
  • 1/4 cup pesto
  • 3 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • freshly ground black pepper
  • salt
  • fresh basil leaves, to garnish

Instructions

  1. Heat the oil in a frying pan over medium low heat.
  2. Sauté onions and cook for 3 minutes or until onions are soft.
  3. Add pesto and salt and pepper then continue to cook for two minutes. Turn heat off
  4. In a large bowl, mix pesto mixture into pasta, stir in grated cheese. then serve.
