Pressed Breakfast Burritos

Creamy, cheesy and warm, it’s a perfect sensation in every bite. Pressed Breakfast Burritos is an easy breakfast prepared with flour tortillas filled with scrambled eggs, mozzarella, cheddar and bacon, heated on a sandwich press util the cheese melts.

The first time I had a breakfast burrito was when I catered for a team breakfast probably around four years ago, since then I had made my own version at home and it was always a hit. A very simple comfort breakfast dish, imagine a soft pillowy flour tortilla with crisp edges, filled with soft and creamy scrambled eggs and melting stretchy cheese, with a hint of meaty bacon and a touch of tangy barbecue sauce, trust me it’s one of the best things you can put in your mouth first thing in the morning. I had made several versions already but never took the liberty to take a photo of it, either becuase we eat breakfast too early there is no proper sunshine yet or I was lazy to put my usual photoshoot stage on my dining table early in the morning.

So far, I tried filling it with chorizo, roast beef, corned beef and bacon but all of them are filled together with soft scrambled eggs which is the key, and to cut the creaminess a barbecue sauce or something tangy can be added to balance all the flavours out.

Instructions

  1. Lay the flour tortillas flat in a working surface, smear one tbsp of barbecue sauce on top of tortilla.
  2. Top it with scrambled eggs, 2 strips bacon, 1 pc cheddar square and 1/3 cup of mozzarella cheese.
  3. Fold top then place it in sandwich press, toast until cheese melts and oozes out. Do it with the remaining flour tortillas
  4. Serve while hot.
