I think our recipe for today is the answer, its creamy, its hot, its savoury, mildly sour and mildly sweet, it’s so tasty even meat lovers won’t notice this is a vegan dish. This is what’s good with many curries, regardless its Indian or Thai, the sauce is the life of the dish and the rest of the ingredients act as the carrier of that wonderful flavour. Our recipe today as mentioned is quite simple, using store bought green curry paste all you need is to sauté that and add the vegetables like cauliflower, tofu and green peas, simmer in coconut milk then you have a really tasty dish that goes really well with freshly cooked jasmine rice.

Cauliflower and Tofu Green Curry is a Thai inspired vegetarian curry dish prepared with tofu, cauliflower and peas cooked in green curry paste.


Ingredients

  • 400 g firm tofu, cubed
  • 1/2 large cauliflower, cut into florets
  • 1 cup green peas
  • 3 tbsp green curry paste
  • 400 ml coconut milk
  • 2 small shallots, finely chopped
  • 3 cloves garlic, minced
  • juice from 1 lime
  • 1 tbsp brown sugar
  • fish sauce or sea salt (for vegan option), to taste
  • oil

Instructions

  1. In a wok add oil then sauté garlic and shallots.
  2. Add curry paste then continue to sauté until fragrant.
  3. Add the cauliflower, then stir fry for a minute.
  4. Pour coconut milk then let it boil, lower the heat then simmer for 8 minutes.
  5. Add the tofu, green peas, sugar and fish sauce / sea salt, continue to simmer in low heat for 3-4 minutes or until vegetables are cooked.
  6. Squeeze lime juice on top, give it a gentle mix, turn heat off then serve.
