I think the best way to prepare vegetables is by grilling them, it releases these nice sweet flavours that caramelises during the grilling process, this makes the taste more robust while giving it a nice smoky hint, all you need is a drizzle of salt and sometimes a light dressing to go with it. Grilling goes well with asparagus, courgettes, capsicum, corn and eggplants.
While grilling might look easy, with eggplants it is quite tricky as you need to get the right balance of oil and thickness so it yields a nice soft eggplant that holds it shape, not mushy and not to chunky as well. It is nice to add some charred bits as well as it give the final dish some character and flavours.

Slice eggplants into 1/4-inch-thick slices. Generously salt the eggplants and let it draw the moisture out for 15 minutes.
Using a paper towel, remove the salt and moisture from the eggplant slices then set it aside.
Mix all marinade ingredients together.
Dip each slice into the marinade then place it in a prepared barbecue grill.
Cook for 5 minutes on each side brushing it with the marinade once if it dried out. Remove from the grill, arrange in a serving platter, drizzle lemon juice on top then serve.
I am not a big fan of nightshade vegetables, but I would definitely eat those grilled eggplants! Just love those sexy grilled marks.
