Garlic & Herb Grilled Eggplant

Easy and Delicious and you can grill it on the side together with your choice of meat. A perfect way to add vegetables to a meaty summer barbecue with the family and friends. Garlic & Herb Grilled Eggplant is a perfect summertime barbecue side dish made with eggplant slices lightly grilled then served with a garlic vinaigrette dressing.

I think the best way to prepare vegetables is by grilling them, it releases these nice sweet flavours that caramelises during the grilling process, this makes the taste more robust while giving it a nice smoky hint, all you need is a drizzle of salt and sometimes a light dressing to go with it. Grilling goes well with asparagus, courgettes, capsicum, corn and eggplants.

While grilling might look easy, with eggplants it is quite tricky as you need to get the right balance of oil and thickness so it yields a nice soft eggplant that holds it shape, not mushy and not to chunky as well. It is nice to add some charred bits as well as it give the final dish some character and flavours.

  4. Perfectly grilled eggplant. With this aromatic marinade, they’re already delicious, but I would also enjoy them over with some yogurt-tahini sauce.
