I think the best way to prepare vegetables is by grilling them, it releases these nice sweet flavours that caramelises during the grilling process, this makes the taste more robust while giving it a nice smoky hint, all you need is a drizzle of salt and sometimes a light dressing to go with it. Grilling goes well with asparagus, courgettes, capsicum, corn and eggplants.
While grilling might look easy, with eggplants it is quite tricky as you need to get the right balance of oil and thickness so it yields a nice soft eggplant that holds it shape, not mushy and not to chunky as well.
