Bocconcini, Tomato and Basil Salad

Satisfaction guaranteed with just a simple salad like this. Bocconcini, Tomato and Basil Salad is a simple Italian style salad simply prepared with Bocconcini, Cherry Tomatoes and Basil dressed in a balsamic vinaigrette.


If you love Caprese then you will definitely love this too, it’s the mini version of Caprese, made with Bocconcini, cherry tomatoes and basil. In reality both salads are similar but with the use of smaller tomatoes it gives it a richer tomato experience becuase of its diminutive size the flavour can be a little more concentrated. Its bright, its sweet, they have a thin, snappy peel and a very juicy centre. For this recipe I used a sweeter variety which is well balanced with the balsamic vinaigrette dressing I used.

Perfect as a summer no-fuss side dish, its light, its vibrant, refreshing and most of all its delicious.

Description

Bocconcini, Tomato and Basil Salad is a simple Italian style salad simply prepared with Bocconcini, Cherry Tomatoes and Basil dressed in a balsamic vinaigrette.

 



Ingredients

Salad

  • 250 g cherry tomatoes
  • 250 g bocconcini
  • handful of fresh basil leaves

Balsamic vinaigrette


Instructions

  1. Slice cherry tomatoes and bocconcini then add them to a bowl.
  2. Add fresh basil leaves.
  3. Mix all balsamic ingredients together then drizzle on top of salad.
  4. Give it a light toss, to distribute dressing. Serve immediately.

    I had to go and google to see what bocconcini is. No, I don’t think we have that here. As a matter of fact, we do not have a wide selection here, just the usual suspects.

  4. This is a standard in our house. Especially in the summer, when we can get really good tomatoes and our basil plants are over growing in the garden. There’s nothing better than this simple dish.
