Strawberry Muffins

They say muffins are just ugly cupcakes, well its quite correct but don’t let beauty fool you sometimes these ugly ones are much better in all aspects

I never knew what a muffin is growing up, it is not a popular food back in the Philippines many years ago, hence, if I can remember correctly, it was only in New Zealand I got introduced to this dish and my first was a blueberry muffin. Since then, we enjoyed it, in fact we had several muffin recipes already that we created and shared as inspired by that first time, some are unique and some are the classics. While many say muffins are just ugly cupcakes, in Philippine’s cupcakes look like muffins, they are not served with icing on top just a plain sweetbread like muffin, it is even the other way around for me, as muffins here in New Zealand are pretty and cupcakes back home looks so plain, so having said that are we eating muffins all along we just call it cupcakes 😁

Today we will be making strawberry muffins, as you know its strawberry season now here in New Zealand, so it is the best time making these. A lot of farms had opened to offer pick your own strawberries and we were one of the ones who did visit these types of farms, our harvest is now used in this muffin we have for today.

Strawberry Muffins

Description

Strawberry Muffins is a type of sweet quick bread leavened with baking powder and baking soda filled with strawberries


Ingredients

Muffin

  • 3 cups all-purpose flour
  • 1 cup white sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 1/2 cups milk
  • 2 tsp vanilla extract
  • 1/2 cup butter, melted and cooled down
  • 2 cups fresh or frozen strawberries, trimmed

Glaze


Instructions

  1. Roughly chop strawberries, set it aside.
  2. Sift together into the mixing bowl all-purpose flour, white sugar, baking powder, baking soda and salt.
  3. Pour the eggs, milk, vanilla extract and butter.
  4. Mix in low speed until well incorporated. Do not over beat otherwise you muffin will be dense.
    Fold in the strawberries
  5. Pour mixture in a prepared 12-hole muffin pan with muffin cups then bake in a 180C preheated oven for 25-30 minutes, until risen and just starting to turn golden on top.
  6. Remove from oven, then let it cool down.
  7. Prepare the glaze by combine all ingredients until smooth, adding enough milk for desired glaze consistency.
  8. Drizzle glaze on top of muffin then serve.

    Those are so pretty! They remind me of my strawberry love muffins, but the extra finishing touch of bright pink icing really sets them apart.
