Description
Camaron Rellenado is a Filipino Chinese dish of minced pork stuffed with large prawns in the middle then deep fried.
Ingredients

Minced Meat Mixture
- 500 g minced pork, 30% fat
- 1/2 cup crab meat or minced prawns
- 2 pcs dried shiitake mushrooms, rehydrated and finely chopped
- 1 egg
- 1 stalk spring onions, minced
- 1 tbsp cornstarch
- 1/2 tsp ground white pepper
- 1 tsp salt
Prawn
- 12 pieces large prawns, shelled and deveined, tail-on
- 1/3 cup flour
- salt
Breading
- 2 pcs eggs, beaten
- 2 cups panko breadcrumbs
- salt
- oil, for deep frying
Instructions
- In a bowl combine all Minced Meat Mixture together, mix well.
- Place flour in a plate, dredge the prawn in into the flour, coating its surface, grab a spoonful of the meat mixture, form it into a flat disc then place a prawn in the middle, fold the minced meat mixture and tightly and thinly cover the prawns with it leaving only the tails exposed.
- Combine beaten eggs and salt in a bowl.
- Place panko bread crumbs in a plate.
- Dip prepared prawn in the beaten mixture then into the breadcrumbs. Set it aside then continue the process for remaining prawns.
- Cook in a 180C heated oil in a deep fryer or wok then deep fry until cooked and golden brown around 8 to 10 minutes.
- Remove from fryer, drain off excess oil then serve.
