Description

Tres Leches is a popular Mexican type of cake where a type of sponge cake is soaked in three kinds of milk, evaporated milk, condensed milk and regular milk topped with a sweetened whipped cream.

 


Ingredients

Cake

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup white sugar
  • 5 pcs large eggs, whites and yolks separated
  • 1/3 cup full cream milk
  • 1 tsp vanilla extract
  • 1/2 tsp cream of tartar

Three Milk Mixture

Cream Topping

  • 500 ml fresh cream, chilled
  • 3 tbsp powdered sugar
  • 1/2 teaspoon vanilla extract
  • ground cinnamon, for topping

Instructions

  1. Prepare your sponge cake, in a mixing bowl beat the egg whites on high speed, once it starts to form stiff peaks, gradually add ΒΌ cup of sugar and the cream of tartar. Continue to beat until its firm enough to hold on its own.
  2. In a bowl sift together flour, baking powder, and salt, set aside.
  3. In a separate mixing bowl combine egg yolks and 3/4 cup of sugar, beat in high speed until its colour is very pale yellow. Add milk and vanilla and stir beat until combined.
  4. Lower speed of mixer then add the flour mixture, mix in low speed until just combined (don’t over-mix).
  5. Gently fold flour mixture into the egg white mixture until combined.
  6. Pour batter in a lightly greased 9 x 9-inch baking pan then bake in a 170c preheated oven for 35 minutes or until a toothpick inserted in the centre of the cake comes out clean. Remove from oven the let it cool completely.
  7. While cake is cooling mix together Three Milk Mixture in a bowl. Using a fork poke holes on top of completely cooled down cake, this will ensure the milk are absorbed evenly. Pour milk mixture into the cake making sure you are equally distributing the milk all over the cakes area.
  8. Cover baking tray with cling wrap then refrigerate it overnight to set.
  9. In a mixing bowl combine Cream Topping ingredients together apart from the cinnamon, whip until stiff peaks form. Pour over the top of the soaked cake, smoothing the top. Dust with cinnamon then serve.
