Ube Muffins

If you don’t have time making that ube cake you’ve been craving for then make this instead, it’s equally as delicious. Ube Muffins is a type of muffin infused with ube extract and ube halaya topped with a sweet buttery coconut streusel.

I was so surprised when I made this using my trusty muffin recipe, the results was really good, it can hold up to its nearest competitor the ube cake, the only difference is that this one does not have icing, in replacement it uses this sweet coconut streusel crumble that adds an interesting crunch and flavour to the whole muffin. Honestly this is one of the best if not the best muffins I tried and even made to date, that subtle earthy sweet flavour you get from ube, with pockets of cubed ube halaya added into the mix, and a buttery sweet coconut crunch similar to cookies, gives it a really satisfying moist texture similar to when we made kamote muffins before.

A perfect match to any hot drinks like coffee, milk or tea, it is not too sweet and not too heavy, just right. So, if you are craving for some ube cake but don’t have that much time to make one, give this one a shot, trust me, this is good if not better than that cake, plus it has less calories too as no icings were involved in making these.

Ube Muffins is a type of muffin infused with ube extract and ube halaya topped with a sweet buttery coconut streusel.


Ingredients

Units Scale

Muffins

  • 3 cups all-purpose flour
  • 1 cup white sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 1/2 cups milk
  • 2 tsp ube flavocol
  • 1/2 cup butter, melted and cooled down
  • 2 cups ube halaya, cut into small cubes

Sweet Coconut topping

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup shredded coconut
  • 1/4 cup butter, melted

Instructions

  1. Prepare Topping, in a bowl combine all sweet coconut topping ingredients, mix well it should be rough and crumbly in consistency.
  2. Sift together into the mixing bowl all-purpose flour, white sugar, baking powder, baking soda and salt.
  3. Pour the eggs, milk, ube flavocol and butter.
  4. Mix in low speed until well incorporated. Do not over beat otherwise you muffin will be dense.
  5. Fold in the ube halaya cubes.
  6. Pour batter in a prepared 12-hole muffin pan with muffin cups, top it with the topping mixture, bake in a 180C preheated oven for 25-30 minutes, until risen and just starting to turn golden on top.
  7. Remove from oven, then set it aside and let it cool down.
  8. Serve warm.
