Description

Salted Duck Egg and Cheese Muffins is an Ang Sarap Original recipe where muffins are prepared with a Filipino twist using salted duck eggs, cheddar cheese and edam cheese.

Instructions

  1. Roughly chop 2 pieces of salted duck eggs, set it aside.
  2. For the other two pieces, slice each egg into 6 sections making sure each section would have an even distribution of yolk and whites. Set this aside.
  3. Sift together into the mixing bowl all-purpose flour, white sugar, baking powder, baking soda and salt.
  4. Pour the eggs, milk, vanilla extract and butter.
  5. Mix in low speed until well incorporated. Do not over beat otherwise you muffin will be dense.
  6. Fold in the cheese and chopped salted duck eggs.
  7. Pour mixture in a prepared 12-hole muffin pan with muffin cups, top each muffin with a slice of the salted duck eggs then bake in a 180C preheated oven for 25-30 minutes, until risen and just starting to turn golden on top.
  8. Remove from oven, while hot top it with grated edam cheese, let it cool down before serving.
