Well for me I am not, I have been thinking about it last year but decided I will just stick to my traditional blogging platform and Instagram so I can concentrate more on why I am here for, to share recipes and educate the online world specially when it comes to the Filipino cuisine. Other platforms might steer me out of track specially when I don’t have that much time allocated for it since I just do blogging on the side and not a profession, it’s just more of a passion for me, hence I cook a lot. Now what does TikTok have to do with this post? Well, this recipe for today is a viral recipe in TikTok made famous in Finland by Liemessa where pasta is prepared simply by baking feta and tomatoes then when ready the cooked pasta is tossed on it. It has been viral for quite some time now but since I am not in TikTok, I was late in the ball game, I just knew this when my daughter requested for it.

There are many recipes or food items that went viral on this platform which some of them makes a lot of sense. These recipes were made quite easy, even for a person who never had touched a pot or pan would easily follow the procedure, like the Vodka Sauce Pasta, Tortilla Fold Hack, Ramen Lasagna, Dalgona Coffee, Noodle Omelette and Oreo Mug Cake. There are other items that went viral because of how they look like Fluffy Pancakes, Sushi Bake, Cloud Bread and Pancake Cereal. I had tried several of them and they are definitely viral worthy and certainly very easy to love.

Going back to our recipe today the Baked Feta Pasta or Uunifetapasta as named by Jenni from Liemessa. A simple recipe even a young kid can make, just put everything in an oven proof container, bake, then you have a pasta sauce, all you need at this point is toss your cooked pasta on it then serve. This pasta had dominated the online world early this year and everyone seemed to be cooking it specially in Finland where feta cheese sales went up 300% there and the shops were running out of baked feta pasta ingredients, luckily here in NZ we still have the ingredients readily available in supermarkets hence I am trying this now.

Description

Baked Feta Pasta is a viral recipe called uunifetapasta made famous in Finland by Liemessa that is prepared simply by baking feta and tomatoes then when ready cooked pasta is tossed on it.


Ingredients

Scale
  • 200 g dried macaroni pasta, cooked according to packet instructions, reserve 1/2 cup of cooking liquid
  • 2 x 250 g punnet cherry tomatoes
  • 200 g block feta cheese
  • handful fresh basil, roughly chopped plus more for serving
  • 4 cloves garlic, minced
  • 1/3 cup extra virgin olive oil
  • sea salt
  • freshly ground black pepper

Instructions

  1. In a baking dish place cherry tomatoes and olive oil, season it with salt, freshly ground pepper and minced garlic then toss to coat tomatoes with oil.
  2. Place a whole block of feta in the middle, flip it to coat it with the seasoning and olive oil.
  3. Bake in a 200C preheated oven for 35 minutes or until the cherry tomatoes burst and the feta cheese melts.
  4. Remove baking tray from oven, immediately add the chopped basil leaves and cooked pasta, toss everything to combine, if you want a bit of moisture to you dish add some of the reserved cooking liquid.
  5. Serve, garnish with extra basil leave and enjoy while hot.

  2. Yeah, that’s a truly viral recipe! Indeed, I’ve been enjoying baked feta for a few years (long before it became trendy), and it’s super delicious, especially with pasta.

    Interesting! Honestly, it looks good, but I’d be picking out tomato skins. I’d much rather use canned crushed or diced tomatoes…
