Cheesy Nachos is a simple Mexican inspired dish prepared with nacho chips topped with generous amounts of hot cheese sauce, studded with jalapeno, black olives, tomatoes, and red beans
Once in a while we love to make Nachos at home but all of the times they are usually topped with guacamole, beef and beans, tomatoes, onions and melted grated cheese, they are quite good but they are too loaded so it’s mostly good to serve as a main dish. Sometimes you want it lighter, just as a snack or to serve on the side and this is where the Cheesy Nachos come into place.
I wanted to make this for a long time but I can’t find the right ingredients to make it, especially the Nacho Cheese sauce you find in Mexico, luckily one day I tried to search online and found this site called Mexi Foods and they do stock this ingredient that I was looking for. By the way this is not sponsored by them in any way, I am just happy that I found a place where to order them easily hence I am sharing it. The cheese sauce I grabbed was this El Mexicano brand and I love it, its cheesy but not too strong, it has a kick but not too hot, a perfect topping to any nacho chips. In fact even without the other ingredients it would taste good, this cheese sauce is just like a crack, it’s addictive now I don’t know what I love more gravy or this one.
Anyways in less than a week after ordering I had the cheese sauce in my hand and that’s what we used with our Cheesy Nachos today. A simple nacho served with generous amounts of this cheese sauce then topping it further with jalapenos, sliced black olives, tomatoes and red beans, no meat at all so it’s good to serve to your vegetarian friends.

Place cheese sauce in a bowl, heat it in a microwave oven for 2 minutes
Place red beans in a bowl, heat it in a microwave oven for 2 minutes
Place nachos on serving bowls, pour nacho cheese on top to your heart’s desire then top it with tomatoes, black olives, red beans, and jalapeno peppers. Serve.
I love nachos for dinner! And the thing about nachos is there are so many ways to mix up the flavor profiles. This classic version is right up my alley. We call that cheese sauce “ballpark nacho cheese” as it’s typically the kind that you find at the concession stands at baseball games. I usually make my own, but every once in a while it’s fun to go with the canned version!
