Description

Yakimeshi is a Japanese style fried rice simply made with rice, ham, eggs, spring onions and soy sauce.


Ingredients

  • 5 cups cold leftover rice
  • 1 cup bacon or ham, roughly chopped
  • 1/4 cup Kewpie mayonnaise
  • 2 tbsp light soy sauce
  • 3 stalks spring onions, chopped
  • 4 eggs, lightly beaten
  • salt
  • ground white pepper
  • oil

Instructions

  1. In a wok heat oil using medium heat.
  2. Add bacon into the wok then cook until brown and crispy.
  3. Add rice bring heat to high and continue to stir fry for 3 minutes.
  4. Push the rice on the sides of the wok to make a well in the middle then pour the eggs together with sesame oil, cook eggs until nearly dry then quickly mix it with the rice mixture.
  5. Add the spring onions and light soy sauce, stir fry for 2 minutes.
  6. Add kewpie mayonnaise, stir fry for a minute, season with salt and freshly ground black pepper.
  7. Turn off heat then serve.
