Grilled Asparagus with Parmesan

Grilled Asparagus with Parmesan is a simple summer dish of asparagus grilled served with a drizzle of olive oil, freshly cracked pepper, and shaved Parmesan

Its day one of autumn here in New Zealand but it still feels like summer so for my last ditch to enjoy the heat were grilling some meats and while doing so we will add some vegetables on the side like this grilled asparagus. This is one of my favourite grilled vegetables, if you have a good quality freshly picked asparagus, when grilled it releases all that sweetness where it tastes like a sweet corn, it’s so good it can survive without meat at all. You can enjoy it fresh from the barbieor serve it with some shaved parmesan, drizzle of olive oil and freshly cracked peppercorn.

Description

Grilled Asparagus with Parmesan is a simple summer dish of asparagus grilled served with a drizzle of olive oil, freshly cracked pepper, and shaved Parmesan


Ingredients

Scale
  • 1 bunch asparagus, trimmed and thick ends peeled off
  • 2 tbsp olive oil
  • shaved parmesan, as much as you like
  • juice from 1/2 lemon
  • salt
  • freshly ground black pepper

Instructions

  1. In a large bowl place asparagus then add olive oil, salt, and freshly ground black pepper. Toss lightly to coat.
  2. Prepare gas or charcoal grill
  3. Place asparagus on grill then cook for 3-4 minutes on each side.
  4. Remove asparagus from the grill place it on serving platter, squeeze fresh lemon juice on top then serve with shaved parmesan cheese.
