Habichuelas is a Filipino dish of Spanish origins prepared with white beans slowly cooked with tomatoes, pork, and Chorizo de Bilbao.



  • 4 cans 400 g white beans, drained
  • 500 g pork shoulder, cut into small cubes
  • 2 pcs Chorizo, sliced
  • 3 cups water
  • 2 cups pork stock
  • 1 white onion, finely chopped
  • 6 cloves garlic, minced
  • 2 pcs tomatoes, diced
  • freshly ground black pepper
  • fish sauce
  • oil


  1. In a pot add oil then sauté garlic and onions.
  2. Add the cubed pork then brown it on all sides.
  3. Add the chorizo then continue to cook for a minute.
  4. Add the tomatoes then continue to cook until tomatoes are soft.
  5. Pour water and pork stock then bring it to a boil, lower heat then simmer for 30 minutes.
  6. Mash white beans from one can, mix well with the soup and let it thicken for 5 minutes
  7. Add the rest of the white beans (not mashed) into the pot, bring back to a boil then season with fish sauce and freshly ground black pepper. Simmer for 15 more minutes, stirring occasionally.
  8. Turn the heat off then serve.
