Caramelized Patis Wings is a Filipino inspired dish of chicken wings cooked in a mixture of honey, fish sauce and lemon until it caramelizes.
Chicken wings are such a versatile ingredient you can cook it in many ways like Buffalo Wings, Maple Bacon, Chinese five spice and Parmesan Garlic, the possibilities are endless and you are just limited by our imagination. Today what our imagination had brought to us is to make a Filipino style chicken wing and what’s best to do that is by infusing it with a Filipino condiment that most Filipinos can’t live without, the Patis (fish sauce). Fish sauce is quite common in Filipino dishes, it is used to season our dishes, and if it’s not enough we serve it on the side so we can put drops of patis on what we are eating to enhance the flavour experience. Same goes with this recipe, what we done here is to serve chicken wings in a caramelized sauce made with honey and patis, which we then infused with chillies to give it nice zing and lemon to bring out the flavours and some freshness, the result is honest to goodness, finger licking, tasty to the bone, easy to make chicken wing dish.
In a non-stick pan add a small amount of oil then sauté garlic.
Bring the heat to high then add chicken nibbles and continuously stir fry until brown on all sides.
Add honey, water, lemon juice and birds eye chillies then give it a good mix bring it to a boil. place on medium heat then cover pan and cook for 10 minutes stirring occasionally.
Bring heat to high then let the liquid reduce to a thick consistency. Stir once in a while to distribute the sauce evenly.
Season with freshly ground black pepper.
Place in serving plate then garnish with chopped coriander
