If I am correct this dish was from a restaurant somewhere in the South of US, I am not sure if its creole but the restaurant that served it was one. The show used ready to use ingredients such as garlic powder, onion powder and gravy mix but for our recipe today we will be using fresh ones apart from the gravy.
One of the highlights of this dish is the pork neck bones, while some may look for alternatives, you should try it with this cut as it will give you the best flavour and meat texture. The bones from this cut will give you a lot of collagen which helps in thickening the stew at the same gives additional flavours comparing to other bony parts and boneless cuts. It’s a very hearty dish but a bit messy, like eating crabs or any crustaceans, you will have to dig in to get the meat from those bone crevices which adds a bit of excitement to your dinner.
