Chicken Castanets

Chicken Castanets is a Filipino recipe prepared with pan seared marinated chicken cooked with chorizo, carrots, mushrooms and tomatoes.


When you have a food blog, you follow other food blogs to get new ideas and basically try their recipes as well. These recipes sometimes are just OK but there are others that are amazing they become a regular meal in your dining table, take this recipe we have today as an example, the Chicken Castanets that I tried over at Salo Salo Recipes Blog by Lisa. A simple concoction of marinated chicken cooked with chorizo, carrots, mushrooms and tomatoes, this dish is a celebration of wonderful flavours, the chorizos give it a nice smoky peppery flavours, the mushrooms give it an earthy taste and the tomatoes makes it tangy and vibrant, it’s so good, we made it several times already.

After some research online where this recipe might have originated, but that led me to no conclusions at all, so I would guess it will be an heirloom / family recipe which Lisa had sort of mentioned in her blog. Thanks for sharing this one to the world, surely, I am not the only one who would love it. The recipe below are adapted to the original one and adjusted it to ingredients available to us.

Chicken Castanets is a Filipino recipe prepared with pan seared marinated chicken cooked with chorizo, carrots, mushrooms and tomatoes.

Instructions

  1. Marinate chicken pieces in soy sauce and Worcestershire sauce overnight
  2. In a large pan add olive oil and place it in high heat. Add chicken and sear both sides until golden brown. Remove chicken from pan then set it aside.
  3. Using the same pan add more olive oil then sauté garlic in low heat, once it starts to turn light brown add onions then continue to sauté until onions are soft.
  4. Bring heat to medium, add chorizo then stir fry for a minute.
  5. Add carrots and mushrooms, continue to cook for two minutes.
  6. Pour the chicken stock scraping the pans bottom while mixing.
  7. Place the chicken together with the dried thyme, bring to a boil, lower heat to simmer for 20 minutes. Cover the pan.
  8. Bring heat back to high, add the tomatoes then continue to cook for 5 minutes and let the liquid reduce.
  9. Season with salt and freshly ground black pepper then serve.

  1. Reading through the ingredient list, I know I would LOVE this. Bone in skin on chicken thighs are the best.

  2. Well, what an incredibly flavorful meal. All these ingredients work so well together. I can imagine this with a bowl of rice being the perfect meal for a winter evening. I agree with Angie Dash bone-in, skin-on chicken thighs are the best.

  3. It looks like you’ve uncovered another treasure here! You can’t go wrong with that combination of flavors, and it looks so easy to make, too. I actually have some meatless chorizo in the freezer that I’ve been hanging on to for just the right recipe, and I think this is it!

  9. There’s such a wealth of creative recipes out there, it’s such a shame I can only enjoy them vicariously most of the time! It’s hard to balance recipe development with the desire to cook from someone else’s playbook. Looks like you picked out a real winner here, worth the sacrifice of personal experimentation!

  12. ‘Castanets’- what a nice name! I actually play the castanets myself! I suppose all the nice spices in this dish would make you feel snappy like the castanets!
