Chilli Bacon Lime Roasted Cauliflower

Last night I saw some leftover cauliflower on my vegetable bin and was wondering what to make out of it, so it does not go to waste. Many things came to mind like cauliflower rice, cauliflower curry, in tomato sauce or with cheese sauce or as a cheese sauce but I want something that has zing and freshness to it since I am making it as a side dish to a light mains. As I checked the cupboard I saw some dried chillies, chilli powder and some paprika, that did solved my problem as it will definitely will give the cauliflower some punch but it does not end there, so to make it even more exciting, I tossed some bacon bits and lime juice for that added flavour and this my friends was the result.

Description

Chilli Bacon Lime Roasted Cauliflower is an easy side dish of roasted cauliflower seasoned with garlic and chilli dressed in scallion lime juice served with crispy bacon bits.

Ingredients

  • 1 medium cauliflower, cut into small florets
  • 2 pcs streaky bacon, sliced
  • 2 tbsp dried red chillies, roughly chopped
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • chopped coriander, to garnish
  • lime wedges, to serve

Instructions

  1. In a large bowl toss together all ingredients apart from the coriander and lemon wedges.
  2. Place in a baking tray lined with baking paper then spread it out in one layer.
  3. Roast in a 210C preheated oven for 20-30 minutes or until edges are crisp and brown.
  4. Served tossed with coriander and lime wedges.

  4. What a fun idea as a way to use leftover cauliflower! Cauliflower has always been one of those “other veggies” to me…I just have a hard time getting on board with it. But roasted with bacon and these seasonings? I think this just might need to happen in our house. Wonderful photos, my friend!
