Samgyupsal is a Korean dish of pork belly grilled over charcoal or tabletop grill usually they are not marinated and just seasoned with salt, but modern versions are marinated in wide array of sauces.




  • 8 pcs 3/4-inch-thick pork belly, cross scored both sides, around 200g per piece

Garlic Sesame Oil Marinade

  • 3 cloves garlic, minced
  • 2 tbsp sesame oil
  • 1/2 tsp salt

Garlic Soy Sauce Marinade

  • 2 tbsp soy sauce
  • 1 clove garlic, minced
  • 1/2 tsp freshly ground black pepper

Italian Herb Marinade

  • 1/1 tsp dried basil
  • 1/4 tsp oregano
  • 1/4 tsp rosemary
  • 1/4 tsp thyme
  • 1/4 tsp sage
  • 1/2 tsp salt
  • 1 tbsp olive oil

Curry Marinade

Red Wine Marinade

  • 1/4 cup Shiraz or Merlot
  • 1/2 tsp salt

Gochujang Marinade

  • 1 1/2 tbsp gochujang
  • 1/2 tsp vinegar
  • 1/2 tsp brown sugar

Sweet Barbecue Marinade

  • 1 tbsp tomato ketchup
  • 1 tbsp soy sauce
  • 1/2 tsp smoked paprika
  • 2 tsp brown sugar
  • 2 cloves garlic, minced

Miso Marinade



  1. Place each marinade ingredients on separate containers or zip lock bag, mix it well then add a piece of pork on each bag. Massage it gently pushing the sauce on the creases of the scores, place in the refrigerator and let it marinate overnight.
  2. Remove pork pieces from the fridge 30 minutes before you cook them.
  3. Grill meat using medium heat over tabletop grill or stove top grill for 4 minutes on each side or until pork is fully cooked.
  4. Serve with rice and assorted banchan.
