Sautéed Courgettes, Spinach and Mushrooms is a simple vegetable stir fry prepared with courgettes, spinach, mushrooms and shrimps sautéed in garlic and onions

With a lot of leftover courgettes from my colleagues’ garden we have another opportunity to do a freestyle recipe and the easiest way to do this by doing a stir fry. I know, stir fry is so common but for our recipe today it will be a combination of vegetables and other flavours that I haven’t tried before and those ingredients are spinach, mushrooms, anchovies and shrimps.

Like most stir fries, this is quite simple, in fact since most of the ingredients are vegetables, it is cooked really fast, meaning you can enjoy this delicious dish in matter of minutes. It’s a dish with a lot of contrasting flavours and taste, crunchy courgettes, soft and earthy mushrooms, slimy spinach, pungent and salty anchovies plus a delicate shrimp.

Sautéed Courgettes, Spinach and Mushrooms

Sautéed Courgettes, Spinach and Mushrooms is a simple vegetable stir fry prepared with courgettes, spinach, mushrooms and shrimps sautéed in garlic and onions


Ingredients

Scale
  • 3 pcs yellow and green courgettes, cut in half-moons
  • 150 g spinach
  • 12 pcs mushrooms, sliced
  • 150 g small shrimps
  • 2 anchovies, finely chopped
  • 4 cloves garlic, minced
  • 1 red onion, sliced
  • 1 tsp dried chilli flakes
  • ground white pepper
  • salt
  • oil

Instructions

  1. In a wok heat oil in medium heat then sauté garlic and onions
  2. Add the mushrooms and dried chilli flakes then continue to stir fry for a minute.
  3. Add the anchovies, continue to stir fry for 30 seconds or until pungent.
  4. Bring heat to high, add the courgettes and shrimps, stir fry for 3 minutes.
  5. Add the spinach, you might need to add a bit of water or chicken stock just to give it a bit of moisture, stir fry for one more minute
  6. Season with salt and white pepper then serve.

  2. Looks like a perfect way to use the courgettes, Raymund. I like the addition of a few shrimp, but I think the ingredient that really packs the flavor here is the anchovy! Very nice.
