Steamed Tofu with Ground Pork

Steamed Tofu with Ground Pork is a Chinese dish of steamed silken tofu topped with savoury minced meat sauce seasoned with soy sauce and oyster sauce.

Ahhhh Tofu, everyone I know hates this, I don’t know why? Possibly they haven’t tried a good recipe yet or is it the texture? Tofu on its own I understand is quite bland, I won’t even dare myself eating it just on its own but it can be made into something amazing, one example is a dish I recently tried the Crispy Salt and Pepper Tofu, while I don’t have my recipe for this yet, I will definitely make one in the future. Basically it’s made with silken tofu, deep fried giving a really crispy outer but moist and silky insides. Another one of my favourites as well is this Mapo Tofu and I guess most Tofu lovers out there will easily put this in their top ten too, another silky delicious dish with nice flavours and a numbing kick. Finally another good one is this dish called Soft Tofu, Mince and Peas again it’s made with silken tofu with carrots, corn, peas and mushrooms.

Silken Tofu might be the common denominator so I suggest start with that and hopefully you find your new love for tofu. And if all of those three I mentioned above is not enough to convince you then how about our recipe for today, again made with silken tofu. I have known this for quite some time now which perhaps I tried first in Malaysia. If you find the recipes I already mentioned is quite difficult then it won’t get easier than this, not a lot of slicing involved because it uses a whole block of silken tofu where it is steamed then topped with savoury minced meat sauce seasoned with soy sauce and oyster sauce, it goes really well with rice. Totally addictive, the flavours and diverse textures is just amazing, convinced yet?

Description

Steamed Tofu with Ground Pork is a Chinese dish of steamed silken tofu topped with savoury minced meat sauce seasoned with soy sauce and oyster sauce.


Ingredients

Scale
  • 1 large block silken tofu
  • 150 g minced pork, 20% fat
  • 2 pcs dried shiitake, rehydrated and finely chopped
  • 2 tbsp dried shrimps, rehydrated and finely chopped
  • 2 stalks spring onions, chopped
  • 2 tsp chilli bean paste
  • 2 tsp oyster sauce
  • 2 tsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1/2 cup water
  • 2 cloves garlic, minced
  • fish sauce, to taste
  • ground white pepper
  • oil

Instructions

  1. Place tofu in a heat resistant ceramic platter, steam in high heat for 5 minutes.
  2. While tofu is steaming, prepare the sauce. In a wok heat a small amount of oil. Add the minced pork, dried shrimps, chilli bean paste and garlic then stir fry until fat starts to render.
  3. In a bowl combine water, oyster sauce, soy sauce, fish sauce and sugar, bring it to a boil.
  4. Add the spring onions, sesame oil and ground white pepper, cook for 30 more seconds then turn the heat off.
  5. Turn the steamer off, remove tofu from the steamer, pour meat sauce on top of tofu then serve.
