Stir Fried Green Beans, Corn and Mushrooms

Stir Fried Green Beans, Corn and Mushrooms is a simple vegetarian stir fry of green beans, corn and mushrooms sautéed in garlic and onions seasoned with soy sauce.

My recipe for Baguio Beans Gisado or Stir-Fried French beans is our usual go to vegetable dish, it’s not just easy to prepare but it is also nutritious and delicious, I am sure those who had tried the recipes would agree.  While that may be good and quite a popular recipe it is not vegan nor vegetarian friendly, in fact there were several times I got an email if I can give a vegetarian alternative for this dish and this is what we are doing today.

At first, I thought how I would recreate it without meat because it was an essential part of that dish’s flavour but after some trial and error, I think I knocked it off dead on the spot by using mushrooms for flavour and corn for the texture.

Description

Stir Fried Green Beans, Corn and Mushrooms is a simple vegetarian stir fry of green beans, corn and mushrooms sautéed in garlic and onions seasoned with soy sauce.


Ingredients

Scale
  • 300g French beans, sliced into 1-inch pieces
  • 4 pcs large Portobello mushrooms, sliced
  • 1/2 cup corn kernels
  • 1 medium sized red onion, chopped
  • 4 cloves garlic, minced
  • ¼ cup soy sauce
  • 1 tsp brown sugar
  • freshly ground black pepper
  • oil

Instructions

  1. In a wok add oil and sauté garlic and onion in high heat.
  2. Add mushrooms and stir fry for 30 seconds
  3. Add French beans and corn and stir fry for 2 minutes.
  4. Add soy sauce, brown sugar mix for 1 more minute and season with freshly ground black pepper.
