The first time I had this dish was at Cotto’s in K’Road, I still remember when I saw a Zucchini Fritti on their menu and was quite intrigued on how they looked like and tasted. I was sceptical at first, but I then realised that Zucchinis can be delicious because I remembered my mom’s Zucchini Bread hence I grabbed an order of it. I was happy with that decision otherwise I would not have tasted this amazing dish. Totally unexpected!
A few days ago a colleague have an abundant haul our courgettes in her garden, she brought a lot in the office and I was one of the lucky recipients, I was given several pieces and had thought of doing this amazing Italian dish. Zucchini Fritti, it is very delicious, and I think it’s a healthy alternative to chips (its fried so I may be wrong) and its very addictive. It can be served as an appetizer, as a side dish or even a beer match. Best serve off the fryer, with a light and crisp texture served with some finely grated parmesan, I highly suggest for you to try it out.
In a big mixing bowl add ice cubes and place a smaller bowl on top.
Mix all batter ingredients lightly on the smaller bowl.
Heat oil to 180C in a deep fryer.
Now dip 1 slice of courgettes at a time in the cold batter, then place it gently into the fryer. Cooking a small batch at a time. Cook for around 30 seconds minute or until it is light brown in colour.
Scoop out everything in the fryer, place in a towel lined plate.
Place in a serving plate, top it with grated Parmesan cheese then serve.
