Binagoongan Baboy sa Gata is a type of Filipino pork stew dish derived from binagoongan where instead of just vinegar and water pork is cooked with coconut milk giving it a creamy taste


  • 1 kg Pork Belly, cubed
  • 2 tbsp vinegar
  • 400 ml can coconut milk
  • 1 cup water
  • 4 tbsp bagoong
  • 5 cloves garlic, minced
  • 1 red onion, finely chopped
  • 2 pcs large tomatoes, chopped
  • 1 tbsp sugar
  • 3 pcs bay leaf
  • 6 pcs green finger chillies
  • freshly ground pepper
  • oil


  1. In a pot add oil and brown the pork on all sides. Remove then set aside.
  2. Now add the garlic and onions then sauté until onions are soft.
  3. Add the tomatoes and stir fry until tomatoes are soft.
  4. Now bring back the pork then add vinegar, 1/2 of the coconut milk bay leaves and water, simmer for 45 minutes or until pork is tender.
  5. Add in the bagoong, remaining coconut milk, sugar and finger chillies then continue mixing until liquid has reduced.
  6. Season with freshly ground pepper.
