Balsamic Short Ribs is a slow cooked beef rib dish cooked in balsamic vinegar with simple aromatics like garlic, onions and thyme.


  • 68 pcs bone-in beef short ribs
  • 2 tbsp tomato paste
  • 1 tbsp fresh thyme, chopped
  • 1 cup balsamic vinegar
  • 1 cup beef stock
  • 1/4 cup water
  • 2 tbsp flour
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • salt
  • freshly ground black pepper
  • extra-virgin olive oil


  1. Season ribs with salt and freshly ground black pepper.
  2. In a large cast iron pan heat oil then brown ribs on all sides. Set ribs aside.
  3. Using the same pan add oil if necessary, then sauté onions until it starts to caramelize.
  4. Add garlic, tomato paste and thyme, cook for one more minute.
  5. Pour vinegar bring to a boil, continue for 2 minutes.
  6. Place ribs in a slow cooker, pour the vinegar mixture then add the broth. Slow cook in low setting for 8 hours.
  7. Place ribs in a serving platter.
  8. Pour liquid in a sauce pan. Whisk flour in water, pour in the saucepan then cook liquid until thick and reduced. Pour sauce on top of ribs then serve.
