Description
Chicken Fried Steak is an American dish of breaded tenderized beef steak deep fried like fried chicken then served with gravy.
Ingredients
Chicken Fried Steak
- 1 kg rump steak, 1/2-inch-thick cuts (approx. 4 large or 6 medium steaks)
- 1 1/2 cups milk
- 2 large eggs
- 2 cups flour
- 3/4 tsp paprika
- 1/4 tsp cayenne pepper
- salt
- freshly ground black pepper
- oil
Gravy
- 1/4 cup roast chicken drippings
- 1/4 cup flour
- 1/4 cup butter
- 3 cups milk
- 1/2 cup cream
- salt
- freshly ground black pepper
Instructions
- Using the back of your cleaver of knife, tenderize your rump steaks. Season with salt and freshly ground black pepper.
- Combine milk and eggs, place it in a wide bowl.
- Combine flour, salt, black pepper, paprika and cayenne then place it in a wide plate.
- Dredge the tenderized steaks in the flour mixture then into the milk mixture then into the flour mixture once again.
- Fry steaks in a 180C preheated oil in a wok or a large skillet for two to three minutes on each side or until beef is cooked.
- Drain of oil, then using the same skillet, place it back in the stove top in low heat. Add butter and drippings, once it melts add the flour, stir until flour is cooked through.
- Gently pour milk, small amount at a time while mixing it with the flour, continue mixing until even in consistency.
- Pour cream and continue to mix and simmer for 2 more minutes, add milk if the consistency is thick to your liking, season with salt and freshly ground black pepper.
- Place one chicken fried steak on a plate , pour gravy on top then serve with mashed potatoes. Serve.
If it’s made with beef, it’s called chuckwagon fried steak, if it uses boneless breast or thigh meat, it’s chicken fried steak, if pork meat is used, it’s country fried steak
