Mango Jelly Salad

Think of this dessert as the long youngest hot cousin of Buko Pandan, with almost similar preparation but instead of pandan leaves and coconut meat we will be using only mangoes. Mango Jelly Salad is a Filipino Salad dessert prepared with cubed mangoes, mango flavoured agar jelly and nata de coco served in a thickened cream and condensed milk sauce, it is a nice summer desert which is very refreshing, tangy, sweet and creamy. It can also be prepared during special occasions like this coming Christmas and New Year. This dessert is what a Mango lovers dreams are made off, and even if you are not a mango lover there is no reason not to like this, trust me it’s so good but don’t blame me if this dessert adds a few inches on your waist.

Buko Pandan is so 90’s why not try this dessert salad for a change.

  • 25g pack Mr Gulaman Mango Flavour
  • 4½ cup water
  • ½ cup white sugar
  • 500 g cubed mangoes, chilled
  • 2 x 340 bottles nata de coco, chilled and drained
  • 250 ml fresh cream, chilled
  • 200 g condensed milk (1/2 of the regular can, if you prefer sweeter just add more)
  1. Prepare Mr Gulaman Mango Flavour according to packet instructions but only use 4½ cup water and ½ cup sugar. Place in a container then let it set in the refrigerator, once set slice them into cubes.
  2. Using a cold mixing bowl, pour fresh cream and using a hand mixer mix until fully whipped. Gradually add condensed milk then set it aside.
  3. In a large container add the gulaman, mangoes and nata de coco, fold in whipped cream mixture, chill before serving.
