Filipino Cocido is a Spanish inspired soup dish of slow cooked meats usually pork, chicken and beef alongside sausages, beans, banana and vegetables.


  • 700 g whole pork bacon hock
  • 3 pcs (approx. 700 g) beef shanks
  • 500 g pork ribs
  • 2 pcs (approx. 200g ) chorizo
  • 400 g can chickpeas, drained
  • 4 pcs saba bananas, sliced
  • 1/2 head cabbage
  • 150 g green beans
  • 2 onions, quartered
  • 6 cloves garlic, minced
  • 1 tsp peppercorns
  • 8 cups water
  • salt
  • oil


  1. In a large soup pot heat oil then brown beef shanks, pork ribs and pork bacon hock on all sides.  Remove from pot then set it aside.
  2. Add more oil if needed then sauté garlic and onions.
  3. Add peppercorns then put the browned meats back, pour water just enough to cover all the meat.  Bring to a boil then lower heat and simmer for 1 hour.  After the first hour add the chorizo de bilbao continue to simmer for 1 more hour.  If water levels is too low add more water.
  4. Add the saba bananas cook for 15 more minutes.
  5. Add the chickpeas, cabbage and green beans then cook for 5 more minutes.
  6. Season with salt and freshly ground black pepper then serve.
