Tinolang Isda is a simple Filipino Soup dish of fish cooked with ginger, garlic, onions and vegetable.

  • 1 kg fish (I used kahawai but you can use any), scaled, gutted and cut into sections
  • 5 cups seafood stock or water
  • 2 bunches bok choy
  • 3 stalks spring onions, chopped
  • 1 thumb sized ginger, thinly sliced
  • 1 large red onion, chopped
  • 6 cloves garlic, minced
  • oil
  • fish sauce or sea salt
  • ground black pepper

  1. Generously salt fish with salt and freshly ground black pepper. Set it aside.
  2. In a pot heat oil then pan fry the fish pieces until brown on both sides. Remove fish from the pot then set aside.
  3. Add garlic, onions and ginger then sauté until onions are soft.
  4. Add the fish back then pour the seafood stock. Bring to a boil then simmer for 12 minutes.
  5. Add the bok choy and spring onions, cover and simmer for 3 more minutes.
  6. Season with fish sauce and freshly ground pepper.
