Filipino Stir Fried Noodle Recipes

We are done with the rice noodles, the thick and thin ones, the soupy ones now let’s go to the normal egg noodles that is just simply stir fried. This is perhaps the most popular noodle type and preparation, and in the Philippines egg noodles used are usually dry. Originated from Chow Mein or Lo Mein hence the most basic ones are called Pancit Canton or in English, Cantonese Noodles.

Pancit Canton – Let’s start with the most basic one, prepared with the Filipino version of egg noodles stir fried in soy sauce then prepared with chicken or pork and vegetables then served with calamansi.

Saucy Pancit Canton – As the name suggest, it’s the saucy version of the above

Pancit Habhab


Pancit Habhab – A variety of Pancit Canton made with smoked noodles called miki served in Banana leaf without any other utensils, and oh yes it goes well with vinegar.

Pancit Pula – The Batanguenos pancit served with red miki noodles coloured by annatto seeds.

Pancit Batil Patong

Pancit Batil Patong – Another miki noodle variant served with minced carabao meat, chopped liver, vegetables and fried egg.


Pancit bato – Bicolano noodle dish prepared similarly to pancit canton but the main ingredients are fresh shrimps and pechay.

Pancit Cabagan

Pancit Cabagan – Another pancit canton variety this time topped with boiled quail eggs and slices of lechon de carajay.


Pancit Lusay – Ilocano pancit with a pungent smell thanks to the bagoong, ginger and shallots

Pancit Macao – Macao style pancit served with scrambled egg bits, Chinese ham, chorizo, shrimp, squid, carrots, and cabbage
