Filipino Rice Noodle Recipes

Let’s start to the noodles made with the staple the Filipinos love, Rice. Like Vietnam we also do use a lot of rice noodles but mostly the rounds ones and not the flat ones used in Pho. We also try to prepare this using the dry method rather than soupy, I haven’t come across a rice noodle dish in the Philippines served with soup.

Pancit Bihon Guisado


Pancit Bihon Guisado – Perhaps the most popular noodle dish in this category, basically it’s a simple stir-fried rice noodles with soy sauce, meat and vegetables

Pancit Palabok

Pancit Palabok – The next popular in this category and my favourite noodle dish. Made with boiled rice noodles, drained then topped with shrimp gravy and tinapa (smoked fish) flakes

Pancit Luglug


Pancit Luglug – Similar to above but using a thicker rice noodle plus this is usually served with more gravy.

Pancit Malabon

Pancit Malabon – Similar to Pancit Luglug but instead of the gravy served on top it is usually mixed already in the noodles, making it drier. Serving is also intricate where squid, shrimps, eggs, etc are topped in an orderly fashion.

Pancit Pusit or Pancit Negra – Black rice noodles where its colour came from squid ink. It is then served with shallots, red/white raw onion and sliced lightly pickled cucumber


Pancit Puti 1

Pancit Puti – The opposite of above where this is purely white. Flavour relies on a good broth and garlic.

Kalo-Kalo – a pancit from Iloilo where Bihon Guisado is topped with dried squid flakes
