Inihaw – Chargrilled Seafood and/or vegetable to perfection. Back home this was the only way to grill, using charcoal, and this method imparts a lot of flavour to the end result.

Inihaw na Panga 1

Inihaw na Panga – My favourite inihaw, tuna jaw or any large fish in that regard. Meat is juicer and tender, like comparing chicken leg meat to breast.

Inihaw na Pusit – Large squid chargrilled then basted with a sweet soy sauce then served with vinegar dip

Inihaw na Rellenong Pusit – Similar to the one above but stuffed with tomatoes and onions

Nilagang Okra at Inihaw na Talong – Chargrilled eggplant served with boiled okra, sounds bland? well it is served with fermented fish sauce.

Pinaputok na Isda 2

Pinaputok na Isda – Inihaw but hotter, usually in red hot burning embers or very high heat oven which makes the fish explode, hence the name pinaputok, which means “to explode”
