Cold Noodles With Sesame Sauce, Egg and Cucumbers

I got served these noodles when I was invited by my close friends for a barbecue dinner at their place. They said they will be doing some Spicy Cumin Lamb Skewers but they served more, as I approached their kitchen, his wife told me that she prepared this special rice noodle for me, and honestly when she showed me the dish first impression is that it might not taste good as it only contains rice noodles, egg and cucumbers.


As we headed back to their deck, we started grilling the amazing lamb skewers together with some large prawns and chicken wings. After some were cooked it was served on the table together with these noodles. After that she showed me her secret sauce, and she said this is what makes that bland looking noodles amazing. Simply named as Sesame sauce she then drizzled it into that bowl that looked so boring and started serving it to me and his husband. She then asked me to try it while she was there which I gladly complied, my first bite was an eye opener, that sauce is like a crack! It certainly gave a lot of live to that boring looking noodle dish and it was amazingly good. That noodle was the perfect pair to the barbecue we are having, and I ate a lot of it. The one she copied had a ham on it but to be honest this alone is tasty enough, no need for a ham.

While we were eating, she told me that she learnt it from her friend and since then she always serves this to her friends, in fact she was telling me one of her colleagues loved it as well and asked for the recipe, in which during that time was online with her and sending pictures of the final result. I also did ask for the recipe and to my surprise it is what you see is what you get, it’s just rice noodles, egg, cucumber and that special crack of a sauce. Now I am sharing it to you and hopefully your eyes will be opened too!

Cold Noodles With Sesame Sauce, Egg and Cucumbers

Serves: 3-4
Ingredients
  • ½ telegraph cucumber, thinly sliced into match stick
  • 250 g thick round rice sticks
  • 3 eggs, beaten
  • roasted sesame sauce
  • oil
Instructions
  1. Prepare rice noodles according to packet instructions
  2. In a pan add small amount of oil then cook beaten eggs in batches, it should be crepe thin. Once cooked place in a chopping board and thinly slice the eggs.
  3. Place all ingredients in a bowl apart from the sesame sauce. Then drizzle some sesame sauce on top then toss. Serve with your favourite barbecue.

    Well this looks easy! I’ve never had a cold noodle bowl, so I think it’s time to give it a go. This looks like a nice, light and delicious meal.
