Description
Prawn and Snapper Miso Soup is a Japanese inspired dish fo snapper, prawns and soft tofu cooked in a miso soup infused with spring onions and nori.
Ingredients
- 2 pcs medium sized snapper, cut into sections
- 350 g medium king prawns, tail on
- 250 g soft tofu, cubed
- 6 pcs dried shiitake mushrooms, rehydrated
- 6 cups dashi stock
- 1/2 cup white miso paste
- 2 pcs nori sheets, cut into small squares
- 2 stalks spring onions, cut into 1-inch length
Instructions
- In a pot add the dashi stock, bring to a light boil.
- Add the snapper and mushrooms then continue to boil for 10 minutes.
- Add the prawns, tofu and spring onions then continue to simmer for 5 more minutes.
- Stir in the miso then add the nori sheets, simmer for 2 more minutes.
- Turn off heat, place in serving bowls then serve.
