Salted Egg Prawn is a dish of quickly deep fried lightly battered prawns dressed in a sauce made with butter and egg yolks spiced with curry leaves.

  • 20 large prawns, shelled and deveined
  • 8 pcs cooked salted egg yolks, mashed
  • 12 sprigs curry leaves
  • 1 egg, beaten
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 2 tbsp butter
  • ½ tsp sugar
  • 1 clove garlic, minced
  • oil
  • salt
  • pepper

  1. Season prawns in sugar, salt and freshly ground black pepper.
  2. Combine flour and corn-starch on a large bowl.
  3. Dip each prawn into the beaten eggs then into the flour mixture. Deep fry in a 180C preheated deep fryer until prawns are cooked and golden brown, this will take around 2 to 3 minutes. Set aside cooked prawns.
  4. Prepare a wok, add oil then sauté garlic.
  5. Add the salted egg yolks, prawns, butter and curry leaves, stir fry until fragrant. Toss to completely coat the prawns with the sauce, serve.
